Equipment

  • 1 Large Skillet with lid
  • 1 Wooden spoon
  • 1 Cutting board

Ingredients

Main Ingredients

  • 1 lb cod fillets
  • 1 can 15 oz chickpeas, drained and rinsed
  • 3 cups diced tomatoes
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley chopped for garnish

Instructions

Preparation

  • Rinse the chickpeas under cold water and set aside. Dice the tomatoes and mince the garlic. Pat dry the cod fillets and season with salt and pepper.

Cooking the Braise

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add diced tomatoes, chickpeas, and oregano to the skillet. Stir to combine and let simmer for 10 minutes.
  • Place the cod fillets in the skillet, spooning tomato mixture over the top. Cover and cook for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
  • Remove skillet from heat and drizzle lemon juice over the braise.

Serving

  • Garnish with chopped parsley and serve hot with crusty bread or over a bed of couscous.

Storage

  • Allow leftovers to cool before storing in an airtight container in the refrigerator for up to 3 days.
