  • 2 lbs beef chuck cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 carrots sliced
  • 3 potatoes diced
  • 4 cups beef broth
  • 2 tsp salt

  • 2 bay leaves

Preparation

  • In a large pot, heat olive oil over medium-high heat. Add beef cubes and brown on all sides. Remove beef and set aside.
  • In the same pot, add onions, carrots, and potatoes. Cook for 5 minutes until onions are translucent.
  • Return the beef to the pot. Add beef broth, salt, pepper, and bay leaves. Bring to a boil, then reduce heat to low and simmer for 45 minutes.

Serving

  • Remove bay leaves. Serve hot with crusty bread or over mashed potatoes.
