  • 1 lb ground turkey Approximately 450 g
  • 1 cup cooked quinoa or brown rice
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mixed bell peppers, diced
  • 1 medium zucchini, diced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 2 Tbsp olive oil (for cooking)
  • 1/2 cup low-sodium chicken broth
  • Optional fresh cilantro or parsley, chopped, for garnish
  • Optional avocado slices for added creaminess

Instructions
 

Preparation

  • In a Dutch oven or large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 2–3 minutes until soft and translucent.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the ground turkey to the pot, season with salt, pepper, paprika, and cumin. Cook for about 5–7 minutes, breaking it up with a wooden spoon, until browned and cooked through.
  • Toss in the diced bell peppers and zucchini. Pour in the chicken broth, stirring gently to combine.
  • Let it simmer for another 5–7 minutes, until the vegetables are tender and the liquid reduces slightly.
  • Taste the mixture and adjust the seasoning as desired.
  • Serve the turkey mixture over a bed of cooked quinoa or brown rice, garnishing with fresh cilantro or parsley if desired.
  • Add avocado slices for a creamy touch if preferred.

Notes

For extra flavor, top the bowls with a squeeze of lime. These turkey bowls store well in the refrigerator for up to four days. Consider adding a pinch of cayenne pepper for a spicy kick.
