Ingredients
  

Shrimp and Marinade

  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt to taste

Salad Ingredients

  • 2 cups romaine lettuce chopped
  • 1 cup spinach leaves
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup corn cooked
  • 1 avocado sliced

Lime Dressing

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a medium mixing bowl, combine olive oil, lime juice, chili powder, cumin, and salt. Add the shrimp and toss to coat evenly. Let marinate for 15 minutes.
  • Heat a non-stick skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are pink and cooked through. Remove from heat and set aside.
  • In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper. Adjust seasoning to taste.
  • In a large serving bowl, layer the romaine lettuce, spinach, cherry tomatoes, black beans, corn, and avocado. Top with the cooked shrimp.
  • Drizzle the lime dressing over the salad. Toss gently to combine the ingredients and coat them with the dressing.
  • Divide the salad into individual bowls and serve immediately. Enjoy with tortilla chips on the side for added crunch.
