  • 1 whole rotisserie chicken, shredded
  • 1 Tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 6 cups low-sodium chicken broth
  • 16 oz refrigerated gnocchi (≈450 g)
  • 1 cup baby spinach, roughly chopped

  • optional grated Parmesan cheese, for serving
  • optional fresh parsley, minced, for garnish

Preparation

  • Begin by heating the olive oil in a large pot over medium heat. Once hot, add the diced onion and sauté for 2-3 minutes until it becomes translucent.
  • Add the minced garlic, sliced carrots, and diced celery to the pot. Sauté for an additional 3-4 minutes, stirring occasionally until the vegetables begin to soften.
  • Sprinkle in oregano and thyme, and stir gently to incorporate. Pour in the chicken broth, and bring the mixture to a gentle boil.
  • Once boiling, reduce the heat and add the refrigerated gnocchi. Allow the soup to simmer for about 5-7 minutes, or until the gnocchi floats and is tender.
  • Stir in the shredded rotisserie chicken and chopped spinach. Season with salt and pepper to taste. Allow the soup to heat through for another 2-3 minutes.
  • Remove the pot from heat. Ladle the soup into bowls and sprinkle with grated Parmesan cheese and fresh parsley if desired.

Notes

For added depth, consider sautéing the vegetables for a few extra minutes before adding the broth. Use your favorite seasonal vegetables to keep the flavors refreshing and varied. This soup freezes well; simply store it in airtight containers for quick meals on future busy nights. Adjust the seasoning to your preference; a squeeze of lemon juice can brighten the flavors just before serving.
