Ingredients
  

Base

  • 3 lbs sweet potatoes peeled and cubed
  • 1/4 cup pure maple syrup
  • 1/4 cup almond milk or regular milk
  • 2 tbsp melted butter
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Topping

  • 1 cup chopped pecans
  • 2 tbsp melted butter
  • 2 tbsp maple syrup
  • 1/4 cup rolled oats

Instructions
 

  • Preheat oven to 375°F (190°C) and lightly grease your baking dish.
  • Boil sweet potatoes for 15 minutes until tender. Drain and mash with maple syrup, milk, butter, cinnamon, and nutmeg.
  • Spread the mashed mixture evenly in the baking dish.
  • In a separate bowl, combine pecans, oats, maple syrup, and butter for the topping.
  • Spoon the topping over the potatoes and bake for 30 minutes, until golden and bubbling.
  • Let rest for 10 minutes before serving warm.

Notes

Assemble ahead and refrigerate overnight for easy baking. Try adding orange zest for extra flavor. Swap butter for coconut oil for a vegan version.
