  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons freshly squeezed lemon juice (about 1 lemon)
  • 1 clove garlic, minced
  • 1 tablespoon fresh basil, finely chopped Use fresh for best flavor.
  • 1 tablespoon fresh parsley, finely chopped Use fresh for best flavor.
  • 1 teaspoon dried oregano Fresh can be used if available.
  • ½ teaspoon salt Adjust to taste.
  • ¼ teaspoon black pepper Adjust to taste.

Preparation

  • In a mixing bowl, combine the red wine vinegar, lemon juice, minced garlic, salt, and black pepper. Whisk until well combined.
  • Gradually pour in the extra virgin olive oil while continuously whisking to emulsify the dressing.
  • Add the finely chopped basil, parsley, and oregano, mixing gently to incorporate the herbs.
  • Taste the dressing and adjust the seasoning if necessary. Add more salt or lemon juice as per preference.
  • Transfer the dressing to an airtight container and let it sit for at least 15 minutes before serving.

Notes

Store in the refrigerator for up to one week; give it a good shake before each use. Can be made a day in advance for deeper flavors.
