Ingredients
  

Pasta Salad

  • 8 oz rotini pasta
  • 1 cup sliced dill pickles
  • 1/4 cup chopped fresh dill

Dressing

  • 1/2 cup mayonnaise
  • 2 tbsp pickle juice
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 to 10 minutes. Drain and rinse under cold water to cool.
  • In a small bowl, whisk together mayonnaise, pickle juice, Dijon mustard, and garlic powder. Season with salt and pepper to taste.
  • In a large mixing bowl, combine the cooled pasta, sliced dill pickles, and chopped dill. Pour the dressing over the pasta, tossing to coat evenly.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
  • Remove the salad from the refrigerator. Taste and adjust seasoning if necessary before serving.
  • This salad can be made a day in advance and stored in an airtight container in the refrigerator.
  • Store leftover salad in an airtight container in the refrigerator for up to 3 days.
