  • 8 slices whole-grain bread
  • 1 large cucumber thinly sliced

Yogurt Herb Spread

  • 1 cup Greek yogurt
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh mint chopped
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a mixing bowl, combine the Greek yogurt with chopped dill and mint. Add salt and pepper to taste. Mix well until smooth.
  • Using a sharp knife, slice the cucumber into thin rounds. Set aside on a plate.
  • Spread the yogurt herb mixture onto each slice of bread. Layer cucumber slices over the spread. Top with another slice of bread.
  • Cut each sandwich into quarters or desired shapes. Arrange on a serving platter.

Serving

  • These sandwiches are best served immediately to maintain freshness and crunch. Garnish with extra dill or mint if desired.
