  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 2 cups cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 red onion finely chopped
  • 1 avocado diced
  • 1/4 cup cilantro chopped

  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

  • Wash all vegetables thoroughly. Dice the bell peppers, halve the cherry tomatoes, and chop the red onion and cilantro.
  • Drain and rinse the black beans and corn. Pat dry with a paper towel to remove excess moisture.
  • In a large mixing bowl, combine beans, corn, tomatoes, diced peppers, onion, and cilantro.
  • Pour lime juice and olive oil over the salad mixture. Season with salt and pepper to taste. Toss to combine.
  • Gently fold in the diced avocado, ensuring it does not get mashed.
  • Cover the bowl and refrigerate for at least one hour to allow flavors to meld.
  • Serve the salad chilled, as a side dish or standalone appetizer.
