Ingredients

Main Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis sliced
  • 1 cup marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 onion chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Optional Add-ins

  • 1/2 cup mushrooms sliced
  • 1/4 cup chopped fresh basil
  • 1/2 tsp red pepper flakes

Instructions

Preparation

  • Slice the zucchinis, chop the onion, and mince the garlic. Have your grated Parmesan ready.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through. Season with salt and pepper.
  • Add the sliced zucchinis and marinara sauce to the skillet. Stir well to combine. Allow to simmer for about 10 minutes until zucchini is tender.
  • Sprinkle grated Parmesan cheese over the skillet. Cover with a lid and reduce heat to low. Let the cheese melt completely before serving.

Serving

  • Once the cheese has melted, remove the lid and serve immediately. Pair with a side of garlic bread or a fresh salad.

Storage

  • Allow leftovers to cool before storing in an airtight container. Refrigerate for up to 3 days.
