Equipment

  • 1 Large Skillet oven-safe if broiling
  • 1 Spatula
  • 1 Mixing Bowl

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes
  • 1 cup shredded Mexican cheese blend

Spices and Seasonings

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper optional

Aromatics

  • 1 medium onion diced
  • 2 cloves garlic minced

Instructions

Preparation

  • Dice the onion and mince the garlic. Rinse and drain the beans and corn. Measure out the spices to have them ready for cooking.

Cooking the Beef

  • In a large skillet over medium heat, add a drizzle of oil. Add the onion and garlic, cooking until fragrant. Add the ground beef, breaking it apart until browned. Drain excess fat if necessary.
  • Stir in the black beans, corn, and diced tomatoes. Season with salt, pepper, cumin, chili powder, and cayenne pepper if using. Stir well to combine.

Finishing the Dish

  • Allow the mixture to simmer for about 10 minutes, letting the flavors meld. Sprinkle cheese evenly over the top, cover, and let it melt.
  • For an extra cheesy crust, transfer the skillet under a broiler for 2-3 minutes or until the cheese starts to bubble and brown slightly.

Serving

  • Serve hot, straight from the skillet, garnished with optional toppings like sour cream, avocado, or fresh cilantro.

Storage

  • Cool completely and store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
