Ingredients
  

Marinade

  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Kabobs

  • 1 1/2 lbs sirloin steak cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 red onion cut into wedges
  • 8 oz button mushrooms whole

Instructions
 

Preparation

  • In a mixing bowl, combine olive oil, minced garlic, lemon juice, rosemary, thyme, salt, and pepper. Whisk together until well combined.
  • Place the steak cubes in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring all pieces are coated. Seal or cover and refrigerate for at least 1 hour or overnight for best results.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated steak, bell peppers, onion, and mushrooms onto the skewers, alternating between the ingredients.

Grilling

  • Preheat your grill to medium-high heat, around 400°F.
  • Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the steak is cooked to your liking and the vegetables are tender and slightly charred.

Serving

  • Remove the kabobs from the grill and let them rest for a few minutes. Serve hot, garnished with additional fresh herbs if desired.

  • Place any leftover kabobs in an airtight container and refrigerate for up to 3 days. Reheat gently before serving.
