Ingredients

  • 4 salmon fillets skinless
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon sliced
  • 2 tbsp fresh dill chopped

Optional Vegetables

  • 1 cup cherry tomatoes halved
  • 1 cup asparagus trimmed
  • 1 red bell pepper sliced

Instructions
 

Preparation

  • Preheat your grill to medium-high heat, around 400°F.
  • Pat the salmon fillets dry with a paper towel. Drizzle with olive oil and season with salt and pepper on both sides.
  • If using, slice the vegetables and set aside. Lightly drizzle with olive oil and season with salt and pepper.

Assembly

  • Cut sheets of aluminum foil, placing a salmon fillet in the center of each. Top with lemon slices and fresh dill. Add optional vegetables around the salmon.
  • Fold the foil over the salmon and vegetables, sealing the edges to create a packet.

Cooking

  • Place the foil packets on the grill. Close the grill lid and cook for 15-20 minutes until salmon is cooked through and flakes easily with a fork.

Serving

  • Carefully open the foil packets, being cautious of the hot steam. Serve the salmon directly from the packets or transfer to a plate.

Storage

  • Allow leftover salmon to cool completely. Transfer to an airtight container and refrigerate for up to 2 days.
