Ingredients
  

For the Marinade

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 cloves garlic, minced
  • 1 tsp red pepper flakes

  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh oregano, chopped (or 1 Tbsp dried)

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts

Instructions
 

Preparation

  • In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, red pepper flakes, salt, pepper, parsley, and oregano. Reserve a small amount of the marinade for serving later.
  • Add the chicken breasts to the bowl, ensuring they are evenly coated. Let it marinate for at least 10 minutes.

Grilling

  • Preheat the grill to medium-high heat. If using a grill pan, heat it over medium heat and lightly oil the surface to prevent sticking.
  • Remove the chicken from the marinade, shaking off excess liquid. Place the chicken on the grill and cook for about 6–7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • Once cooked, remove the chicken from the grill and let it rest for a few minutes.

Serving

  • Serve the grilled chicken drizzled with the reserved Salmoriglio marinade, garnished with more fresh herbs and lemon wedges.

Notes

Marinate the chicken longer for enhanced flavor. Pair with grilled vegetables or a green salad. Reheat leftovers on the grill briefly for better texture.
