Ingredients
  

Chicken Salad

  • 2 cups cooked chicken shredded
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh parsley chopped
  • 2 tbsp fresh dill chopped
  • 2 tbsp fresh chives chopped
  • Salt and pepper to taste

Sandwich Assembly

  • 8 slices of bread
  • Lettuce leaves
  • Tomato slices

Preparation

  • Cook chicken breasts until they are fully cooked through. You can boil, grill, or bake them. Allow to cool before shredding into pieces.
  • In a large mixing bowl, combine mayonnaise, Greek yogurt, parsley, dill, and chives. Mix well to combine.
  • Add the shredded chicken to the bowl with the dressing. Stir until the chicken is evenly coated with the creamy herb mixture. Season with salt and pepper to taste.
  • If desired, lightly toast the bread slices for added texture and flavor.
  • Spread a generous amount of the chicken salad mixture onto a slice of bread. Top with lettuce and tomato slices, then close the sandwich with another slice of bread.
