  • ½ cup extra-virgin olive oil Use high-quality for best flavor.
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced Use a garlic press for easy mincing.

  • 1 tablespoon fresh lemon juice (optional) Adds brightness to the dressing.

Optional Garnish

Instructions
 

Preparation

  • In a mixing bowl, combine the red wine vinegar, minced garlic, and Dijon mustard.
  • Slowly whisk in the olive oil until the mixture emulsifies and thickens slightly.
  • Add the dried oregano, salt, and pepper; whisk together until well incorporated.
  • Taste the dressing and adjust the seasoning, adding lemon juice for extra brightness if desired.
  • If time allows, let the dressing sit for at least 10 minutes before serving.

Serving Suggestions

  • Serve over fresh greens or use as a marinade for your favorite proteins.
  • If using as a salad dressing, consider adding crumbled feta cheese on top.

Notes

This dressing can be refrigerated for up to a week. Customize with fresh herbs or a pinch of red pepper flakes for heat.
