Ingredients
  

Chicken Marinade

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1.5 lbs boneless skinless chicken breasts

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup cucumber grated
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 tbsp fresh dill chopped
  • Salt and pepper to taste

Gyro Bowl Assembly

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion sliced
  • 1/2 cup cucumber diced
  • 4 pita breads warmed
  • Fresh dill for garnish

Preparation

  • In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add the chicken breasts and coat thoroughly. Cover and refrigerate for at least 30 minutes.
  • In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, and chopped dill. Mix well, then season with salt and pepper to taste. Chill until ready to serve.
  • Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Allow to rest before slicing.
  • Place a generous scoop of cooked rice or quinoa in each bowl. Top with sliced grilled chicken, cherry tomatoes, red onion, and cucumber. Add a dollop of tzatziki sauce. Serve with warm pita bread and garnish with fresh dill.
