Ingredients
  

Sweet Potato Base

  • 4 large sweet potatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Stuffing Options

  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked turkey bacon crumbled
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
  • Wash and dry the sweet potatoes. Pierce each potato several times with a fork. Rub them with olive oil, salt, and pepper.
  • Place the sweet potatoes on the prepared baking sheet and bake for 30-40 minutes or until tender when pierced with a fork.

Stuffing and Baking

  • Remove the potatoes from the oven and allow them to cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a sturdy shell.
  • In a mixing bowl, combine the scooped sweet potato flesh with cheddar cheese, bacon, and green onions. Mix well until combined.
  • Fill each sweet potato shell with the stuffing mixture. Return to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.

Serving

  • Remove from the oven and garnish with sour cream and additional green onions if desired. Serve warm.

Storage

  • Place any leftovers in an airtight container and refrigerate for up to three days. Reheat in the oven or microwave before serving.
