  • 1 Mixing Bowl large
  • 1 Potato masher

Ingredients

Main Ingredients

  • 1 pound fresh salmon fillets skin removed
  • 2 medium sweet potatoes peeled and diced
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Optional Add-Ins

  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • A pinch of cayenne pepper
  • 1/4 cup chopped green onions

Instructions

Preparation

  • Boil the diced sweet potatoes in a pot of salted water until tender, about 10-12 minutes. Drain and mash them in a large bowl.
  • While the potatoes cook, chop the salmon into small pieces and add to the bowl with the mashed sweet potatoes.
  • Add breadcrumbs, eggs, parsley, garlic powder, salt, and pepper to the bowl. Mix gently until just combined.
  • Cover the mixture and refrigerate for at least 30 minutes to make it easier to handle.
  • Shape the chilled mixture into patties, about 1/2 inch thick.

Serving

  • Heat olive oil in a non-stick skillet over medium heat. Fry the patties for 3-4 minutes on each side or until golden brown and cooked through.
  • Serve the fish cakes warm with your choice of sauce and side dishes.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving.
