Ingredients
  

Salmon Patties

  • 1 lb fresh salmon finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg lightly beaten
  • 2 tbsp fresh dill chopped
  • 1 tbsp lemon zest
  • Salt and pepper to taste

Toppings

  • 4 brioche buns toasted
  • 1 avocado sliced
  • 1 cup lettuce leaves
  • 1/2 cup pickled red onions
  • 4 slices cheese of choice

Sauce

  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp dill chopped
  • 1 tsp sriracha optional for spice

Instructions
 

Preparation

  • In a large mixing bowl, combine the finely chopped salmon, breadcrumbs, egg, dill, lemon zest, salt, and pepper. Mix until well combined. Form the mixture into 4 equal patties and refrigerate for at least 30 minutes to firm up.

Grilling

  • Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
  • Place the salmon patties on the grill and cook for 4-5 minutes on each side, or until they reach an internal temperature of 145°F. Remove from the grill and set aside.

Assembling the Burgers

  • In a small bowl, mix together the mayonnaise, lemon juice, dill, and sriracha (if using). Adjust seasoning as needed.
  • Spread the sauce on the bottom half of each toasted brioche bun. Top with a salmon patty, a slice of cheese, avocado slices, lettuce, and pickled red onions. Place the top bun on and serve immediately.
