Turkey

  • 1.5 lbs turkey tenderloin
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Sweet Potatoes

  • 2 large sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

Preparation

  • Preheat the oven to 375°F. Chop the rosemary and peel and cube the sweet potatoes.
  • In a mixing bowl, combine the turkey tenderloin with olive oil, rosemary, salt, and pepper. Ensure the turkey is evenly coated.
  • In another bowl, toss the sweet potatoes with olive oil, salt, and pepper until well coated.
  • Place the seasoned turkey on one side of a lined baking sheet. Spread the sweet potatoes on the other side.

Cooking

  • Roast in the preheated oven for 45 minutes, turning the potatoes halfway through, until the turkey is cooked and the potatoes are tender.

Serving

  • Slice the turkey tenderloin and serve with a generous portion of roasted sweet potatoes on each plate.
