  • Preheat your oven to 400°F. Peel and cube the pumpkin into bite-sized pieces. Toss with olive oil, salt, pepper, and cinnamon. Spread evenly on a baking sheet.

  • While the pumpkin roasts, pat the chickpeas dry. Toss with olive oil and smoked paprika. Spread on a separate baking sheet and roast for 20 minutes, until crispy.
  • In a small bowl, whisk together olive oil, lemon juice, maple syrup, salt, and pepper until well combined.
  • In a large mixing bowl, combine the roasted pumpkin, chickpeas, and chopped kale. Drizzle with the dressing and toss to combine.
  • Taste the salad and adjust seasonings as necessary, adding more salt, pepper, or lemon juice if desired.
