  • 8 lasagna noodles
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh sage chopped
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Preparation

  • Preheat the oven to 400°F. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  • Boil the lasagna noodles according to package instructions until al dente. Drain and set aside.
  • In a large mixing bowl, combine roasted squash, ricotta cheese, Parmesan, and chopped sage. Season with salt and pepper to taste.

Serving

  • Spread the squash mixture evenly over each noodle. Roll the noodles up tightly and place seam-side down in a baking dish.
  • Preheat the oven to 375°F. Pour half of the marinara sauce in the baking dish, place the rolls, cover with remaining sauce and sprinkle mozzarella cheese on top. Bake for 25 minutes until bubbly and golden.

Storage

  • Allow rolls to cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
