Ingredients
  

Salmon and Marinade

  • 1 lb salmon fillets
  • 1/4 cup maple syrup
  • 2 tbsp olive oil
  • 1 tbsp fresh sage chopped
  • Salt and pepper to taste

Farro and Vegetables

  • 1 cup farro
  • 1 red bell pepper diced
  • 1 red onion sliced
  • 1 cup broccoli florets

Toppings and Garnishes

  • 1/4 cup toasted walnuts
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley chopped

Instructions
 

Preparation

  • In a medium mixing bowl, combine the maple syrup, olive oil, chopped sage, salt, and pepper. Mix well.
  • Place the salmon fillets in the bowl with the marinade. Ensure the fillets are well-coated. Cover and refrigerate for 30 minutes.
  • While the salmon marinates, preheat your oven to 400°F.
  • Rinse the farro under cold water. In a saucepan, bring 2 cups of water to a boil. Add the farro and a pinch of salt. Simmer for about 30 minutes until tender.
  • Place the marinated salmon on a lined baking sheet. Bake for 15-20 minutes, or until the salmon flakes easily with a fork.
  • In the same oven, roast the diced bell pepper, sliced onion, and broccoli florets for 15 minutes.

Serving

  • Divide the cooked farro among bowls. Top with baked salmon and roasted vegetables. Sprinkle with toasted walnuts and chopped parsley.
  • Drizzle lemon juice over the bowls before serving.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
