Ingredients
  

Beef

  • 3 pounds beef chuck roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic minced

Root Vegetables

  • 2 cups diced carrots
  • 2 cups diced parsnips
  • 2 cups diced sweet potatoes
  • 1 large red onion sliced

Maple Glaze

  • 1/2 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon thyme leaves

Instructions
 

Preparation

  • Season the beef chuck roast with salt and pepper. In a large skillet over medium-high heat, heat olive oil and sear the beef on all sides until browned. Transfer to a roasting pan.
  • In a small bowl, combine minced garlic, Dijon mustard, and thyme. Rub this mixture over the top of the seared beef.
  • In a large bowl, combine diced carrots, parsnips, sweet potatoes, and sliced red onion. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  • Preheat oven to 350°F. Spread the vegetables around the beef in the roasting pan. Pour the maple glaze over the beef and vegetables. Cover with foil and roast for about 50 minutes.
  • Remove the beef from the oven and let it rest for about 10 minutes to allow the juices to redistribute.

Serving

  • Slice the beef against the grain into thin slices. Assemble the bowls by placing roasted vegetables at the bottom, followed by slices of beef. Drizzle any remaining pan juices over the top.
  • Garnish with fresh herbs like parsley or chives. Serve immediately for best flavor.
