Ingredients
  

Salmon and Marinade

  • 4 salmon fillets skin removed
  • 1/4 cup maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Vegetables

  • 1 lb Brussels sprouts halved
  • 2 large carrots sliced
  • 1 red onion cut into wedges
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a medium mixing bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, and lemon juice. Season with salt and pepper to taste.
  • Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  • Place the salmon fillets on one side of the prepared sheet pan. Brush each fillet generously with the maple mustard marinade.
  • In a separate bowl, toss Brussels sprouts, carrots, and red onion with olive oil, salt, and pepper. Arrange the vegetables on the other side of the sheet pan.

Cooking

  • Transfer the sheet pan to the preheated oven and bake for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender and slightly caramelized.
