  • 1 lb ground chicken
  • 2 cloves garlic minced
  • 1/2 cup breadcrumbs

  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1/2 tsp smoked paprika

Roasted Squash

  • 1 medium butternut squash peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  • Preheat the oven to 400°F. In a large mixing bowl, combine ground chicken, minced garlic, breadcrumbs, egg, maple syrup, soy sauce, and smoked paprika. Mix gently until just combined.
  • Using an ice cream scoop, form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
  • Toss the cubed butternut squash with olive oil, salt, and pepper. Spread evenly on a separate baking sheet.
  • Place both the meatballs and squash in the oven. Bake for 25-30 minutes, or until the meatballs are cooked through and the squash is tender and caramelized.

Serving

  • Transfer the roasted squash and meatballs to a large serving dish. Drizzle with additional maple syrup if desired and garnish with fresh parsley before serving.
