Ingredients
  

Cod and Potatoes

  • 4 cod fillets
  • 1 pound baby potatoes halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lemon juiced

Lemon Garlic Butter

  • 1/4 cup unsalted butter
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped

Preparation

  • Preheat the oven to 400°F. Halve the baby potatoes and place them in a large mixing bowl.
  • Toss the potatoes in olive oil, salt, and pepper. Arrange them on one side of a 9x13-inch baking dish.
  • Place the cod fillets on the other side of the baking dish. Season with salt, pepper, and lemon juice.
  • In a small saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant. Stir in chopped parsley.
  • Pour the lemon garlic butter over the cod and potatoes. Bake in the oven for 25-30 minutes or until the fish flakes easily and potatoes are golden.

Serving

  • Garnish with additional lemon slices and parsley before serving. Serve immediately for best flavor.
