Ingredients
  

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt

  • 1 cup creamy peanut butter
  • 1/2 cup applesauce
  • 2 large eggs
  • 1/3 cup honey
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Gather all the ingredients and prepare by peeling and dicing the apple.
  • In a large bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, and salt. Stir until well mixed.
  • In another bowl, whisk together peanut butter, applesauce, eggs, honey, and vanilla extract until smooth and creamy.
  • Gradually add the dry ingredients to the wet ingredients. Stir until just combined. Fold in the diced apple.
  • Pour the mixture into the prepared baking pan. Smooth the top with a spatula. Bake for 30-35 minutes, until the top is golden and the bars are set.

Serving

  • Allow the bars to cool in the pan for 10 minutes. Then, transfer them to a wire rack to cool completely before cutting into bars.

Storage

  • Once cooled, store the bars in an airtight container at room temperature for up to 5 days. For longer storage, refrigerate for up to 10 days.
