  • 1 large head of cauliflower cut into florets
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 cup lentils rinsed
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh parsley chopped

Preparation

  • Preheat your oven to 400°F. In a large bowl, toss the cauliflower florets with olive oil, minced garlic, salt, and pepper. Spread them evenly on a baking sheet.
  • Place the baking sheet in the oven and roast for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
  • While the cauliflower is roasting, bring a medium saucepan of water to a boil. Add the lentils and cook until tender, about 15-20 minutes. Drain and set aside.
  • In a large bowl, combine the roasted cauliflower, cooked lentils, lemon juice, and chopped parsley. Toss gently to combine.

Serving

  • Serve the salad warm or at room temperature. Adjust seasoning with additional salt and pepper if needed.
