  • 1.5 lbs boneless skinless chicken thighs
  • 1.5 lbs Yukon Gold potatoes sliced
  • 4 cloves garlic minced

  • 1/4 cup unsalted butter
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • Pat the chicken thighs dry with paper towels. Season with salt and black pepper on both sides.
  • In a large skillet, heat olive oil over medium-high heat. Add chicken thighs and cook for 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add sliced potatoes. Cook for 10-15 minutes, stirring occasionally, until they start to crisp up and become golden brown.

Combine Ingredients

  • Lower the heat to medium. Add minced garlic and butter to the skillet. Stir until the butter is melted and garlic is fragrant, about 1 minute.
  • Place the cooked chicken back into the skillet. Spoon some of the garlic butter over the chicken and allow to heat through for 5 minutes.
  • Sprinkle with freshly chopped parsley before serving for a touch of freshness and color.
  • Serve hot with a side of fresh green salad or steamed vegetables. Enjoy!
