Ingredients
  

Acorn Squash

  • 4 medium acorn squash
  • 2 tbsp olive oil
  • Salt and pepper to taste

Stuffing

  • 1 lb ground turkey
  • 1 cup dried cranberries
  • 1/2 cup breadcrumbs
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1/2 cup celery diced
  • 1 tsp ground cinnamon
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat oven to 400°F. Halve the squash and remove seeds. Brush with olive oil, season with salt and pepper, and place cut side down on a baking sheet. Roast for 25 minutes.
  • In a skillet over medium heat, cook ground turkey until browned. Add onions, garlic, and celery, cooking until softened.
  • Stir in cranberries, breadcrumbs, cinnamon, salt, and pepper. Mix well and remove from heat.
  • Turn the roasted squash cut side up. Fill each half with the turkey mixture, pressing down gently.
  • Return to the oven and bake for an additional 25 minutes, until stuffing is golden.

Serving

  • Allow to cool slightly before serving. Enjoy as a main dish or side.

  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven until warm.
