Preparation

  • Preheat oven to 375°F. Pat the cod fillets dry and season with salt and pepper. Grate the parmesan cheese and set aside.
  • Heat olive oil in a sauté pan over medium heat. Add spinach and cook until wilted. Set aside.
  • In a baking dish, layer the cod fillets and top with cooked spinach. Sprinkle grated parmesan and breadcrumbs over the top.
  • Place the baking dish in the oven and bake for 25-30 minutes, until the top is golden and bubbly.
