  • 2 cups corn kernels fresh or canned
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  • In a large mixing bowl, combine corn, cheddar cheese, flour, cornmeal, baking powder, salt, and pepper. Mix well to ensure all the dry ingredients are evenly distributed.
  • In a separate bowl, whisk together eggs, milk, and sour cream. Pour this mixture into the dry ingredients and fold until just combined. Be careful not to overmix.
  • Preheat your oven to 375°F. Lightly grease a muffin tin and spoon the corn mixture evenly into each cup, filling them about three-quarters full.

Serving

  • Bake for 25-30 minutes or until the tops are golden brown and a tester comes out clean. Allow to cool slightly in the tin before transferring to a serving platter.
  • Serve warm with your choice of dips, such as ranch or sriracha mayo. These bites are best enjoyed fresh but can also be served at room temperature.
