  • 2 lbs chicken breast diced
  • 2 cups corn kernels
  • 1 can 10.5 oz cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

  • 1/2 cup diced bell peppers
  • 1/4 cup chopped jalapeños

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Dice the chicken breast and season with salt, pepper, and garlic powder.
  • In a large skillet, cook the diced chicken over medium heat until no longer pink.
  • In a large mixing bowl, combine cooked chicken, corn, cream of chicken soup, and half of the cheddar cheese. Mix well.
  • Transfer the mixture into a greased 9x13 inch baking dish. Top with remaining cheddar cheese.
  • Bake in the preheated oven for 40-45 minutes until the cheese is golden and bubbly.

Serving

  • Allow the casserole to cool for 5 minutes before slicing and serving. Enjoy with a side salad or steamed vegetables.
