  • 1 lb shrimp peeled and deveined
  • 1 1/2 cups orzo
  • 3 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Instructions
 

Preparation

  • Season shrimp with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from skillet.
  • In the same skillet, add garlic and sauté for about 1 minute until fragrant.
  • Add orzo to the skillet and stir to coat with the garlic and oil. Lightly toast the orzo for 2 minutes.
  • Pour in the chicken broth and bring to a simmer. Cook the orzo, stirring occasionally, until it absorbs most of the liquid and becomes tender, about 10 minutes.
  • Reduce the heat to low and stir in heavy cream and Parmesan cheese until the cheese melts and the sauce becomes creamy.
  • Return the cooked shrimp to the skillet and gently toss everything together until well combined. Adjust seasoning if necessary.

Serving

  • Garnish with chopped parsley before serving. Add a sprinkle of Parmesan cheese if desired.

  • Transfer leftovers to an airtight container and refrigerate for up to 3 days.
