Equipment

  • 1 food processor
  • 1 Small saucepan
  • 1 serving bowl

Ingredients

Chickpea Dip

  • 2 cups canned chickpeas drained and rinsed
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Optional Add-ins

  • 1/4 tsp red pepper flakes
  • 1/4 cup Greek yogurt
  • A dash of smoked paprika
  • 1 tbsp tahini

Instructions

Herb Oil Preparation

  • Heat olive oil in a small saucepan over low heat. Add minced garlic and cook until fragrant, about 1 minute. Remove from heat and allow to cool slightly.

Dip Preparation

  • In a food processor, combine chickpeas, cooled garlic oil, fresh parsley, cilantro, lemon juice, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.
  • Taste the dip and adjust seasoning if necessary. If too thick, add more olive oil or a splash of water to reach desired consistency.
  • Transfer dip to a serving bowl. Garnish with additional chopped herbs or a drizzle of herb oil.

Serving

  • Serve the dip with your choice of fresh vegetables, pita chips, or toasted baguettes for dipping.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving again.
