Acorn Squash

  • 2 medium acorn squashes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Garlic Herb Chicken

  • 1 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chicken broth

Preparation

  • Preheat the oven to 400°F. Cut the acorn squashes in half lengthwise and scoop out the seeds. Brush the cut sides with olive oil and season with salt and pepper.
  • Place the squash halves cut-side down on a baking sheet. Roast for 25 minutes until tender.
  • Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant. Add the chicken breasts, season with rosemary, thyme, salt, and pepper. Cook until browned and cooked through. Shred the chicken with two forks.
  • In a mixing bowl, combine shredded chicken with Parmesan cheese and chicken broth. Mix well.
  • Remove the squash from the oven and turn them over. Spoon the chicken mixture into each squash half, filling them generously.
  • Return the filled squash to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
