  • 2 medium acorn squashes halved and seeded
  • 1 tbsp olive oil

Stuffing Ingredients

  • 1 lb ground beef
  • 2 garlic cloves minced
  • 1 onion diced
  • 1 tbsp fresh thyme chopped
  • 1 tbsp fresh rosemary chopped

Preparation

  • Preheat your oven to 400°F. Cut the acorn squashes in half and scoop out the seeds. Brush the cut sides with olive oil and season with salt and pepper. Place them cut side down on a baking sheet lined with parchment paper.
  • Roast the squash for about 30 minutes until tender. Remove from the oven and set aside.
  • In a medium skillet, heat olive oil over medium heat. Add the diced onions and minced garlic, sauté until translucent. Add the ground beef and cook until browned.
  • Stir in the chopped thyme and rosemary, season with salt and pepper, and let cook for a few more minutes to allow flavors to meld.
  • Turn the roasted squash halves over and fill each one generously with the beef mixture.
  • Place the stuffed squash back in the oven and bake for an additional 20 minutes until the beef begins to brown on top.
