  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 cups baby potatoes, halved
  • 3 Tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt & pepper, to taste
  • 2 Tbsp fresh parsley, chopped (for garnish)
  • Optional: fresh lemon wedges (for serving)

Preparation

  • Begin by heating one tablespoon of butter in a large skillet over medium-high heat. Once melted, add the halved baby potatoes, seasoning with salt and pepper. Cook the potatoes for about 10 minutes, stirring occasionally, until they develop a golden-brown crust and are tender when pierced with a fork. Remove the potatoes from the skillet and set aside.
  • In the same skillet, add another tablespoon of butter and allow it to melt. Add the steak pieces and season with salt, pepper, and dried thyme. Sear the steak for about 3-4 minutes on each side until they reach your desired level of doneness.
  • Add the minced garlic to the skillet and stir for about 30 seconds until fragrant. Be cautious not to burn the garlic.
  • Return the cooked potatoes back to the skillet. Stir everything together gently, allowing the flavors to meld for about 2 minutes.
  • Remove the skillet from heat. Stir in the remaining tablespoon of butter for extra richness. Garnish with fresh parsley before serving.

Notes

For an extra dimension of flavor, consider marinating the steak in olive oil, garlic, and herbs for an hour before cooking. Let the cooked steak rest for a few minutes before serving to retain its tenderness. Customize by adding vegetables like bell peppers or green beans toward the end of cooking.
