Dressing

  • 1/4 cup olive oil

  • 1 teaspoon Dijon mustard

Preparation

  • Preheat the oven to 400°F. Toss the sweet potato cubes with olive oil, salt, and pepper in a large bowl. Spread them on a baking sheet and roast for 25-30 minutes, or until tender.
  • Heat a grill pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for 6-7 minutes on each side until fully cooked. Let it rest before slicing.
  • Whisk together olive oil, balsamic vinegar, honey, and Dijon mustard in a small bowl. Season with salt and pepper to taste.

Serving

  • In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, feta cheese, and toasted pecans. Add roasted sweet potatoes and sliced chicken. Drizzle with dressing and toss gently to coat.
