Lemon Herb Haddock

  • 4 haddock fillets
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon fresh thyme chopped
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs

Sweet Potato Mash

  • 3 large sweet potatoes
  • 1/4 cup unsalted butter
  • 1/4 cup milk
  • 1 tablespoon honey
  • Salt to taste
  • 1/4 teaspoon cinnamon

Instructions
 

Preparation

  • Preheat oven to 400°F. Place haddock fillets on a baking sheet lined with parchment paper. Mix olive oil, lemon juice, zest, garlic, parsley, and thyme in a bowl. Brush over fillets and season with salt and pepper. Sprinkle breadcrumbs on top and bake for 18-20 minutes.
  • Peel and chop sweet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add butter, milk, honey, salt, and cinnamon. Mash until smooth and creamy.

Serving

  • Serve haddock alongside sweet potato mash. Garnish with fresh herbs and lemon wedges if desired.
