Ingredients

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Wrap Bowl Ingredients

  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 cup red onion sliced
  • 1/2 cup kalamata olives pitted
  • 1/2 cup feta cheese crumbled
  • 4 pita breads or wraps

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large mixing bowl, combine olive oil, garlic, lemon juice, salt, and pepper. Add the chicken and coat well. Cover and let marinate in the refrigerator for at least 30 minutes.
  • In a separate bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, salt, and pepper. Stir until well combined and chill until ready to use.
  • Heat a grill pan over medium-high heat. Remove chicken from marinade and grill for 5-7 minutes on each side until cooked through. Let rest before slicing.

Serving

  • Divide mixed greens into bowls. Top with sliced grilled chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese. Drizzle with tzatziki sauce.
  • Grill or warm pita breads on a separate grill pan. Serve on the side with the wrap bowls.

Storage

  • Store any leftover chicken separately in an airtight container in the refrigerator for up to 3 days. Keep salad components and tzatziki sauce in separate containers.
