Preparation

  • Rinse the farro under cold water. In a medium saucepan, bring 3 cups of water to a boil. Add farro and a pinch of salt. Reduce heat and simmer for 20 minutes or until farro is tender. Drain and let cool.
  • Wash and dry the kale. Remove the stems and tear the leaves into bite-sized pieces. Massage the kale with a small amount of olive oil to soften.
  • Roughly chop the pistachios to add texture to the salad.

Serving

  • In a large salad bowl, combine the massaged kale, cooked farro, dried cranberries, and chopped pistachios. Toss to mix well.
  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.
  • Pour the dressing over the salad mixture. Toss to coat the ingredients evenly with the dressing.
