Ingredients

  • 2 cups wild rice cooked and cooled
  • 2 apples sliced
  • 1 cup fresh cranberries
  • 1/2 cup chopped walnuts or pecans

Dressing Ingredients

  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar
  • 2 tbsp honey
  • Salt and pepper to taste

Preparation

  • Rinse the wild rice under cold water. Boil a pot of water and add the rice. Simmer for 45-50 minutes until the rice is tender. Drain and let cool.
  • In a large bowl, combine the cooled wild rice, sliced apples, fresh cranberries, and chopped nuts. Toss gently to mix.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper. Adjust seasoning to taste.
  • Pour the dressing over the salad and toss to coat all ingredients evenly. Taste and adjust seasoning if necessary.

Serving

  • Transfer the salad to a serving platter or bowl. Garnish with additional nuts and a sprig of fresh herbs if desired.
