Ingredients
  

For the Chicken

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice

  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Pita Boxes

  • 4 pita breads
  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1 cup lettuce shredded
  • 1 cup tzatziki sauce

Instructions
 

Preparation

  • In a large mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts, ensuring they are well-coated with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.
  • Preheat your grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest before slicing into strips.

Assemble the Pita Boxes

  • Warm the pita breads in an oven or microwave until soft. Lay them flat on a clean surface.
  • In each pita, layer shredded lettuce, cherry tomatoes, and sliced red onion. Add a handful of grilled chicken strips on top.
