Preparation

  • In a small mixing bowl, combine fresh lemon juice and Dijon mustard. Whisk until fully integrated, creating a frothy mixture.
  • Gradually add the extra-virgin olive oil while whisking continuously. The dressing should become creamy and slightly thickened as the oil is added.
  • Add the minced garlic, salt, and pepper to taste, adjusting seasoning as needed.
  • If desired, stir in honey or maple syrup for a hint of sweetness.
  • Transfer to a jar or storage container and seal tightly. Shake well to combine before serving. If stored, shake again before use.

Notes

Pro Tips: Use freshly squeezed lemon juice, adjust garlic to taste, and consider adding shallots for depth. Do not skip whisking for proper emulsification.
