Ingredients
  

Egg Mixture

  • 10 large eggs
  • 1/3 cup milk optional
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Filling

  • 1 lb ground turkey sausage
  • 1/2 cup bell pepper diced
  • 1/4 cup onion diced
  • 1/2 cup cheese shredded

Instructions
 

  • Preheat oven to 375°F and grease a muffin tin.
  • Cook turkey sausage until browned, then add vegetables and soften.
  • Whisk eggs with milk, salt, and pepper.
  • Stir sausage mixture and cheese into eggs.
  • Divide mixture into muffin cups.
  • Bake until set and lightly golden.
  • Cool completely before storing or freezing.
