  • 1 cup long-grain rice (such as basmati or jasmine)
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 cup frozen peas and carrots
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • to taste Salt & pepper
  • Optional: fresh herbs (such as parsley or cilantro) for garnish

Instructions
 

Preparation

  • Rinse the rice under cold water in a fine-mesh strainer until the water runs clear. Set aside to drain.
  • In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent and fragrant.
  • Add minced garlic and diced bell pepper to the pot. Cook for an additional 2-3 minutes, stirring frequently.
  • Stir in the rinsed rice, ensuring it's well-coated with the oil. Cook for about 1 minute to lightly toast.

Cooking

  • Pour in the broth and add the frozen peas and carrots, cumin, and paprika. Stir to combine and season with salt and pepper. Bring to a boil.
  • Once boiling, reduce the heat to low and cover. Simmer for 15-20 minutes or until rice is tender and has absorbed the liquid.
  • Remove from heat and let sit for an additional 5 minutes, still covered. Fluff the rice with a fork and garnish with fresh herbs before serving.

Notes

Rinse the rice for the best texture; consider adding other vegetables like zucchini or mushrooms for more flavor. Leftovers store well in an airtight container for up to three days.
